Organic Sprouted Thai Red Curry Rice

So easy to prepare, serve as a spicy alternative to a traditional side dish or as a light meal anytime.
In a medium saucepan combine 1¾ cups of water, rice, seasoning and 1tsp. of olive oil (optional). Stir well and bring to a boil.
Cover and reduce heat to maintain a simmer. Do not lift lid while cooking. Simmer for 35 minutes.
Remove from heat. Let stand covered for 5 minutes. Fluff with fork and serve.
Soak up the compliments.
For even more flavor, substitute ¾ cup of water with unsweetened coconut milk.
Make this a meal by adding cooked diced chicken, bamboo shoots, and pineapple pieces.
