Butternut Squash Risotto

Enjoy the sweet, rich, and slightly nutty taste of butternut squash in this elegant Italian-style risotto. We created this delicious gourmet side dish by blending quality ingredients like butternut squash, onion, garlic, and spices with our creamy Arborio rice. You'll love how the individual kernels plump, creating a rich, creamy sauce while the rice grains remain separate and al dente. Preparing this tasty risotto takes about 20 minutes and requires minimal stirring. It's an easy, convenient way to add gourmet flair to any meal.

Cooking Instructions

In a heavy 2 qt. saucepan, sauté rice in ½ Tbsp. olive oil over medium heat for 2 minutes. Add 2 cups water, ½ cup milk and contents of seasoning pouch. Stir well and bring to a boil. Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until rice is tender. Serve piping hot.

    I have to say I usually like Lundberg products but this one has SO MUCH SALT in it I felt like my throat got a salt burn after I ate it. Will never buy again. What food product needs 500 mg of salt? Lundberg, please lighten up on the sodium.

    How long to sauté the rice- toss to coat?   With packaged food I shouldn't have to look up additional instructions in a cookbook.  Good, not great.   $2 worth of grain to with frozen peas and a duck egg.

    91 yr old uncle wanted risotto like his childhood. this butternut squash was in our opinion unedible. the flavor very bad. so sorry it disappointed him and i wasted almost 3.00 and threw the rest away..
