Ingredients

1 box Lundberg Crabby Rice

3/4 cup Vegan Sausage

3/4 cup cubed Tofu

1 tsp Saffron

1/2 tsp Salt

1/2 tsp Pepper

1/4 cup White Wine

1/4 cup Red Bell Pepper

1/4 cup fresh or frozen Peas

1/4 cup chopped Red Onion

1/4 cup chopped fresh Parsley

2 Tbsp Olive Oil

Preparation

Cook the crabby rice according to the package. Meanwhile, in a saute pan heat the olive oil on high until it starts to ripple. Add the onion, red bell pepper, tofu and sausage. Brown thoroughly- aprox 5 min. Add the white wine, the peas, parsley, salt, pepper and saffron. Simmer until the wine has reduced to almost nothing. Combine the pan mixture with the finished crabby rice.
