Ingredients

1 box Lundberg Family Farms Crabby Rice

1 c diced ripe Plum or Cherry Tomatoes

1 c shaved Corn off the cob

1/4 c chopped Scallions

1/2 c fine diced Zucchini

3/4 c Vegetable Stock

2 Tbsp Olive Oil

Preparation

Cook the crabby rice according to the package.  Halfway through the cooking process add the zucchini. When the rice is finished add the tomatoes, stock and corn, simmer for 5 minutes and remove from heat. Stir in the scallions and olive oil.
