Ingredients

1 box Lundberg Family Farms Crabby Rice

1 12 oz can Black Beans drained and rinsed

1/4 c chopped Scallions

1/4 c chopped Cilantro

2 tsp fresh chopped Mint

2 Tbsp fine chopped Red Onion

1 tsp ground Cumin

1/2 tsp Salt

2 tsp Olive Oil

Lime Wedges for Garnish

Preparation

Cook the crabby rice with the cumin according to package. When the rice is just about done stir in the black beans, onion and olive oil. Allow to cool for 5 minutes and stir in the herbs and scallions. Garnish with lime wedges.
