1 large cucumber, seeded and finely chopped

3 tbsp chopped fresh cilantro

2 tbsp finely chopped red onion

1 tbsp honey

1 tbsp lime juice

1 tsp lime zest

ΒΌ tsp each salt and pepper

1 bag (6 oz/170 g) Lundberg Sesame Seaweed Rice Chips

Preparation

In bowl, toss together cucumber, cilantro, red onion, honey, lime juice and zest. Season with salt and pepper to taste. Serve with Lundberg Sesame Seaweed Rice Chips.
