Ingredients

12 medium sized lacinato kale leaves

½ of a medium sized onion, finely diced

4 oz of asparagus, chopped into ¼” pieces

2 teaspoon olive oil

1½ cups of cooked Lundberg Whole Grain Rice and Wild Rice or Rice and Quinoa side dishes

2oz of goat cheese, crumbled

Salt and pepper to taste

Sauce:

½ cup of plain greek yogurt

Zest and juice of ½ a lemon

½ a stalk of green garlic or 1 clove garlic, minced

½ teaspoon salt

⅛ teaspoon ground black pepper

Preparation

To prepare the kale, first bring a large pot of water to a boil, season with salt. While water is heating, remove ⅔ of the rib from each kale leaf, reserve for filling. Place all leaves into the water and blanch until soft and flexible, about 3 minutes. Remove leaves from water, drain and pat dry.

To prepare the filling, cut the kale ribs, asparagus and onions into small pieces. Heat 2 teaspoon of olive oil in a medium sized skillet over medium heat, add the onion and kale ribs, season lightly with salt and pepper and cook stirring frequently, until softened and fragrant, about 3-4 minutes. Add the asparagus and continue cooking until vegetables are tender, about 5 minutes more. Add prepared rice and stir until well combined and all components are heated through. Remove from heat, add crumbled goat cheese and stir to combine.

To make the rolls, place the kale veined side down, and put 1-2 tablespoon of the filling in the middle. Fold the bottom of the kale leaf over the filling, then fold the top of the leave over the center, tucking and rolling the leaf into a tight roll. Press slightly to seal the top of the leaf to the roll. Place on a serving platter, with the top of the leaf tucked down. Repeat with remaining rolls.

To prepare sauce, mix together all sauce components until well combined, chill until ready to serve.
