Masala Rice Chickpea Patties

1 ½ cups of cooked Lundberg Family Farms Masala Rice

1 15oz can of chickpeas, drained and rinsed, divided

¼ cup of cilantro leaves loosely packed

1/2 – 1 jalapeno (depending on desired spiciness), seeds and all

1 clove garlic, peeled

1 tsp. grated ginger

Juice of ½ a lime

1 tsp. garam masala

½ tsp. ground cumin

3/8 tsp. sea salt


Cucumber Raita

½ cup grated cucumber

½ cup whole milk Greek yogurt

¼ tsp. ground cumin

¼ tsp. ground coriander

1 scallion, thinly sliced

½ tsp. lime juice

1/8 tsp. of salt (or to taste)



6 burger buns


Thin cucumber slices

Mango chutney

Tomato slices

To prepare patties, place all ingredients except ½ cup of chickpeas and ¾ of rice in a food processor. Run the food processor until an almost smooth paste is formed (about 60 seconds). Add the remaining chickpeas and rice pulse 4-5 times until coarsely chopped and evenly distributed.

Divide mixture into 6 equal portions and form into 3.5” diameter round patties. Place formed patties on a plastic wrap lined sheet pan and refrigerate for at least 1 hour or until ready to cook.

Place grated cucumber in a paper towel or cheese cloth, squeeze and drain out excess liquid. Transfer cucumbers to a small bowl and add remaining raita ingredients. Mix well to combine and chill until ready to serve.

Heat a medium-sized skillet or grill pan over high heat. Lightly grease pan with cooking spray or oil and place patties in pan. Reduce heat to medium and cook until light golden brown about 2-3 mins per side. Transfer cooked patties to a plate and allow to cool slightly.

Place burger buns cut side down in same pan and toast to desired level.

Assemble burgers by spreading cucumber raita on bottom bun, next layer the patty, tomato slices, cucumber slices, and arugula; spread top bun with mango chutney and top burger.
