Ingredients

1 cup Lundberg Family Farms Olde World Pilaf

2 cups cooked eggplant, (all the liquid squeezed off)

½ cup carrots, shredded

1-2 Tbsp. fresh garlic, minced (to taste)

1-2 Tbsp. fresh shallot, minced (to taste)

1-2 Tbsp. fresh ginger, minced (to taste)

1-2 Tbsp. jalapeno, minced (to taste)

½ cup cilantro, minced

2 tsp. lime zest

2 Tbsp. sweet curry powder

1 tsp. cinnamon

½ tsp. dry mustard

½ tsp. salt

½ cup panko (substitute unseasoned bread crumbs)

2 Tbsp. vegetable oil

6 Pita Pockets, or 3 large Pitas cut in half.

1 seedless cucumber, diced

2 tomatoes, diced

2 cups lettuce, shredded

Tzatziki Sauce (your favorite recipe)

Preparation

Cook Lundberg Old World Pilaf according to package directions.

Combine all ingredients and form into 12 small patties. If the mixture is too wet, add a bit more panko or breadcrumbs. Heat the oil in a skillet and fry the patties until they are brown on both sides. Set aside.

Place lettuce, cucumber, tomato and 2 patties in a pita pocket or half large pita and top with the tzatziki sauce.
