Tri-Color Quinoa Slaw with Peanut Dressing
¼ of a medium sized cabbage, shredded (about 3 cups)
2 carrots, peeled and shredded
4 scallions, trimmed and sliced on the diagonal into thin rings
½ cup of cilantro leaves, loosely packed
2 cups of cooked Lundberg Family Farms Tri-Color Quinoa
3 tablespoon creamy peanut butter
1 teaspoon fresh grated ginger
1.5 tablespoons of water
1.5 tablespoons of granulated sugar
1.5 tablespoons of tamari
1.5 tablespoons of rice wine vinegar
Juice of ½ a lime
½ teaspoon toasted sesame oil
1 teaspoon sriracha or your favorite hot sauce
¼ cup roasted salted peanuts, chopped
¼ cup toasted coconut flakes
In a large mixing bowl, combine all slaw ingredients together, and toss until well combined.
To prepare dressing, in a microwave safe bowl, add peanut butter, ginger, water, and sugar.
Microwave for 30 seconds and mix well until homogenous, add the remaining dressing ingredients and stir until well combined.
Toss the slaw mixture in the dressing, garnish with chopped peanuts and coconut, along with additional scallions and cilantro if desired.
