Ingredients

1 cup Lundberg Family Farms Long Grain White Rice

1 ½ cups low sodium, low fat vegetable broth

1 tsp. Smoked Paprika

1 small carrot, peeled and chopped

½ medium red bell pepper (about ¾ cup) seeded and diced

½ turnip, rutabaga, or parsnip (about ½ cup) peeled and chopped

¼ acorn, butternut squash or other winter squash (about 1 cup) seeded, peeled, and cut into cubes

2 green onions, sliced

½ cup mushrooms, sliced

½ medium zucchini (about ½ cup) sliced horizontally and cut into half moons

1 tsp. dried thyme, or 1 tablespoon fresh snipped thyme

Salt & pepper to taste 

Preparation

Bring vegetable broth to boil in a 3 quart stockpot; add Lundberg Long Grain White Rice and all remaining ingredients.  Stir, reduce to simmer, cover, and cook for 20 minutes. Remove from heat; steam for 10 minutes and serve.
