Ingredients

1 cup Lundberg Black Japonica ™ Rice, cooked according to package directions, cooled

1 cup corn kernels, fresh, frozen, or canned

1 can (15 oz.) black beans, rinsed

1 can (12 oz.) mild salsa

1 large tomato, seeded and diced (1 cup)

4-6 green onions, diced (¾ cup)

1 each green and red bell pepper, seeded and diced

1 can (2.25 oz.) sliced black olives, drained (¼ cup)

2 tsp. cumin powder

¼ cup fresh cilantro, chopped (optional)

2 cloves garlic, minced

2 tbsp. lime juice

Preparation

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve.
