Ingredients

1 box of Lundberg Family Farms Tuscan Rice Whole Grain Entrée

4 chicken thighs, skin on, bone in

1 medium sized yellow onion, quartered and sliced into thin strips

3 cloves garlic, minced

1 teaspoon chopped fresh thyme leaves

1 teaspoon chopped fresh rosemary leaves

1 teaspoon salt, divided

¾ teaspoon fresh ground pepper, divided

½ lb of swiss chard

1 cup grape tomatoes

1 cup chicken broth

1 cup water

2 teaspoon olive oil

Preparation

In a small bowl combine thyme, rosemary, 2 cloves of minced garlic, ¾ teaspoon of salt, and ½ teaspoon of fresh ground black pepper. Rinse chicken under running cold water, drain and pat dry with paper towels. Rub herb and garlic mixture all over the chicken thighs, being sure each piece is well coated. In a 14” pan with lid, heat olive oil over high heat. Once pan is hot add chicken pieces skin side down into the pan. Allow to cook for 4-5 minutes until skin is light golden brown.

While chicken cooks, prepare the swiss chard by removing the steam from the leaves. Chop stems into ¼-1/2” pieces and chop the leaves into 1” thick ribbons. Once chicken is browned, flip pieces over and add onions, 1 clove of minced garlic, swiss chard stems, ¼ teaspoon of salt and ¼ teaspoon of pepper to the pan. Sauté for 3-4 minutes until onions have softened.

Add the rice and Tuscan seasoning to the pan, stiring to ensure even distribution, then add water and chicken broth to the pan and bring to a simmer over high heat. Once simmering, cover pan and reduce heat to medium, cook until all moisture has been absorbed by the rice about 30-40 minutes.

Once rice looks ready, turn off heat. Uncover pan and add swiss chard leaves and tomatoes into the pan, replace cover and allow to steam on the warm burner for 10-15 minutes, until the tomatoes burst and the swiss card leaves are tender.
