Food Truck – Vegetable Fried Quinoa & Rice
1 box Lundberg Family Farms Basil & Bell Pepper Quinoa & Rice
1/2 cup Frozen Peas
1/4 cup chopped Onion
1/2 cup chopped Carrot
3 tsp. Garlic
1/2 tsp. Ginger
1.5 Tbsp. Teriyaki sauce
2.5 Tbsp. Soy Sauce
3/4 tsp. Sesame oil
1 Tbsp. Olive Oil
Cook 1 box of Basil & Bell Pepper Quinoa & Rice according to box instructions.
Mix teriyaki sauce, soy sauce, and sesame oil in bowl. Set aside.
Heat 1/2 Tbsp. olive oil in saute pan. Add onion and carrots and cook about two minutes. Add garlic and ginger to the pan. Cook another two minutes.
Add 1/2 Tbsp. olive oil more to pan and add Basil & Bell Pepper Quinoa & Rice. Stir-fry about two minutes. Add sauce and stir-fry until incorporated, about two minutes.
Make a well in the center of the quinoa and rice, pour 2 eggs lightly beaten in, scramble.
Throw in frozen pea. Toss everything together until peas are warmed through.
Plate, enjoy, and soak up the compliments.
