Ingredients

1 cup Lundberg Family Farms Wild Blend® Rice, cooked according to package directions, cooled

1 cup cooked, boneless chicken breast, cubed

1 medium tomato, seeded and diced

4-6 green onions, chopped

⅓ cup fresh or frozen green peas

4 tbsp. rice vinegar

1 tbsp. sesame oil

1 clove garlic, minced

½ tsp. dried tarragon

½ tsp. salt

½ tsp. ground black pepper

Preparation

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve.
