Raisin Rice Bran Muffins

Cooking Instructions:

  • 1 1/4 cups whole-wheat flour
  • 1 cup rice bran
  • 3/4 cup raisins
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 tbsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 1/4 cups buttermilk
  • 3 tbsp. vegetable oil
  • 2 egg whites, lightly beaten
  • Vegetable cooking spray

Combine flour, bran, raisins, sugar, baking powder, cinnamon and salt in large bowl. Combine buttermilk, oil and egg whites in small bowl; add to dry ingredients. Stir just until dry ingredients are moistened. Spoon batter into 12 muffin cups coated with the cooking spray. Bake 400 degrees for 15 to 17 minutes. Cool slightly on wire rack. Serve warm. Makes 12 minutes.
