Peanut Butter Rice Crispy Treats

Cooking Instructions:

  • 4 cups crumbled Lundberg rice cakes* (or 4 cups puffed rice cereal)
  • 1 cup peanut butter
  • 1 cup Sweet Dreams Rice Syrup
  • 1 cup raw almonds, finely chopped

Wisk the peanut butter and rice syrup in a sauce pan on moderate-low heat to the point of boiling. In a large bowl, mix crumbled rice cakes and almonds. Coat crumbles with rice syrup and peanut butter mixture. Spray a square baking dish with non-stick spray and press the crumbles mixture into the pan. Allow to cool and cut into squares.

*Use any flavor of Lundberg rice cakes: Honey Nut, Apple Cinnamon, Buttery Caramel, Cinnamon Toast, Caramel Corn, or Brown Rice

    It would be kind of nice to have printer friendly format for recipes!  And since you sell the brown rice syrup one would think it would be used as the sweetener in your recipes instead of sugar.

    i'd like to reiterate what karen brey said.  i love your rice syrup and would love to see more recipes using this instead of sugar.  could you also explain how differently sugar and rice syrup work chemically in baking?

    This recipe is awesome. I have made it several times. I like to add dried cranberries, as well. Usually I make it with gluten free brown rice puffs and gluten free crunchy peanut butter.

    BJ, We hope you like the recipe! Unfortunately some of our older recipes do not have nutrition information available at this time. Next time our test kitchen cooks this up though, we'll make sure they weigh everything out so we can add it here :)

    just made a batch..can't wait til cool. i used brown rice crisps and a spoonful of  earth balance. i have been looking for recipe like this for a long time. so very glad to find it--thanks a bunch-----cece
