Apple Couscous Dessert

Cooking Instructions:

    • 2 ½ cups apple juice
    • 2/3 cup Lundberg Original Plain Brown Rice Couscous
    • ¼ cup golden raisins
    • ½ tsp. mixed spices
    • 1 large cooking apple, peeled, cored, and sliced
    • 2 Tbsp. light brown sugar
    • Plain yogurt to serve

    Preheat oven to 400° F. Place apple juice, couscous, raisins, and spice in a pan and bring to a boil stirring occasionally. Cover and simmer for 12-15 minutes until all free liquid is absorbed. Spoon the mixture into a baking dish and top with apple slices. Sprinkle top with brown sugar. Bake for 25 minutes. Serve hot with yogurt. Serves 8 to 10.
