Elegant and Creamy Peach Pudding

Cooking Instructions:

    • 3 cup cooked Lundberg® Brown Short Grain Rice
    • 3 cup milk
    • 1/4 cup sugar
    • 1 tsp vanilla
    • 1/4 cup Sweet Dreams Rice Syrup
    • 2 Tbs margarine
    • 2 tsp lemon juice
    • 1 tsp grated lemon peel
    • 1/2 tsp ground nutmeg
    • 1/8 tsp salt (optional)
    • 1 can (16 oz.) sliced peaches in their own juice drained
      Fresh are better! Use 2 cups sliced fresh peaches.

    Combine rice, milk and sugar in 3-qt. saucepan. Cook over medium heat until thick and creaming, stirring often (25 min.). Add vanilla. Pour into 4-qt. serving bowl. Heat syrup, margarine, lemon juice/peel, nutmeg and salt. Stir in peaches, cook on low for 10 minutes. Spoon over rice pudding. Serve warm or cold. Makes 10 servings.
