Spa Cuisine Rice Pudding

Cooking Instructions:

    • 2 cups nonfat milk
    • 1/2 cup honey
    • 4 egg whites
    • 2 tsps. vanilla
    • 4 cups cooked Lundberg® Sweet Brown Rice
    • 1 cup raisins
    • 1 cup low-fat peach yogurt
    • 1 tsp. cinnamon

    Preheat oven to 350 degrees. In large bowl, whisk egg whites, and stir in milk, honey and vanilla. Add rice and raisins. Stir well and transfer to greased 2 quart casserole dish. Cook for 40 minutes, stirring occasionally during cooking. Remove from oven and stir in peach yogurt and cinnamon. Serve immediately; makes 8 servings.
