Stuffed Tomatoes with Mediterranean Couscous, Feta Cheese, Mint & Raisins
Cooking Instructions:
- 1 box Lundberg Family Farms Mediterranean Curry Roasted Brown Rice Couscous, prepared according to package directions
- 8 ripe, medium-to-large tomatoes, pitted
- 1/2 cup raisins
- 1/2 cup mint, chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup pitted tomato pulp
Preheat oven to 325°F. In a large bowl, combine couscous, raisins, chopped mint, feta cheese, and tomato pulp. Stuff equally divided mixture inside the ripe medium-to-large tomatoes. Bake for about 20 minutes.
Serves 8.
