Crispy Cheesy Rice Round
2001 Recipe Contest Top Ten Runner-Up
Cooking Instructions:
- 2 cups cooked Lundberg® White Arborio
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup seasoned dried breadcrumbs
- 2 Tbsp. chopped fresh parsley
- Salt and pepper to taste
- 2 Tbsp. light olive oil
Beat eggs and mix with cooked rice, add grated cheese, mix well, and add salt and pepper to taste. Heat 2 Tbsp. light olive oil in a non-stick 9" frying pan. Add rice mixture and pour breadcrumbs and parsley on top. Flatten mixture out evenly and cook until bottom turns crispy. Put pan into heated 350 degree oven and bake until top is lightly brown. Remove from oven and slide the rice round into a serving dish and cut into serving pieces for 4 to 6.
