Curried Black Beans and Rice with Sausage

Cooking Instructions:

  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 1 tablespoon curry powder
  • 1/2 pound smoked turkey sausage, thinly sliced
  • 3/4 cup chicken broth
  • 2 16-ounce cans black beans, drained
  • 1 tablespoon white wine vinegar (optional)
  • 3 cups cooked rice

    Heat oil in large heavy skillet over medium heat. Cook onion and curry powder, stirring well, until tender. Stir in sausage and broth; simmer 5 minutes. Stir in beans; cook until hot, stirring constantly. Remove from heat and stir in vinegar. Spoon over rice. Makes 10 servings.
