Easy Mushroom Rice Pilaf
Cooking Instructions:
- 1 cup Lundberg Short Grain Brown Rice
- 2 cups broth
- 1 1/4 cups chopped fresh mushrooms
- 2/3 cup chopped onion
- 2 tbsp. chopped fresh parsley
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- 1/8 tsp. pepper
Combine all ingredients in a 3-quart saucepan. Bring to a boil, reduce heat to low, cover and simmer 50 minutes. Remove from heat and let stand, covered, 10 minutes. Stir and serve immediatly. Makes 4-6 servings.
