Fragrant Pilaf with Golden Raisins

Cooking Instructions:

  • 8 oz Basmati & Wild Rice
  • 1 tbsp olive oil
  • 1/2 tbsp grated orange peel
  • 1/4 cup golden raisins
  • 1 tsp ground coriander
  • 3/4 tsp salt
  • 1 2/3 cups liquid (water or broth)
  • 1/2 cup green onion tops, sliced thinly
  • 1/4 cup almonds, sliced and toasted

    In medium saucepan saute rice and orange peel in olive oil for 1 minute. Add raisins, salt, coriander and liquid. Bring to a boil, cover. Reduce heat to a fast simmer, cook for 20 minutes. Let stand covered 10 minutes. Stir in onions and almonds. Serve
