Rice Pizza
2001 Recipe Contest Top Ten Runner-Up
Cooking Instructions:
- 4 cups cooked
Lundberg® Sushi Rice
- 3 cups grated cheddar cheese
- 2 eggs slightly beaten
- 1 1/2 Tbsp. granulated or powdered garlic
- 2 Tbsp. oregano
Topping:
- 1 1/2 cups tomato sauce (can use chunky onion & garlic flavored)
- 1 cup chopped green pepper
- 1 cup chopped red pepper
- 1 lb. browned Italian sausage
- 2 cups grated mozzarella cheese
- Cooking oil spray
Cook rice according to package directions. Preheat oven to 375 degrees. Brown sausage in sauce pan on stove, drain and let cool. To the cooked rice add grated cheddar cheese, 1/2 Tbsp. garlic, 1 Tbsp. oregano, and slightly beaten eggs and mix together well. Spread rice mixture over 12-inch round pizza pan that has been sprayed with cooking oil spray. Spread tomato sauce evenly over rice crust. Sprinkle 1 Tbsp. garlic and 1 Tbsp. oregano over tomato sauce. Sprinkle green peppers, red peppers, and sausage over pizza. Put in oven and cook for 10-15 minutes. Cover top of pizza with mozzarella cheese and cook for another 10-15 minutes. Let cool 5-10 minutes before cutting into slices.
