Wild Blend® Rice with Chicken & Broccoli

Cooking Instructions:

  • 1 pound boneless, skinless chicken pieces, cut into strips    
  • 1 ½ cups Lundberg Family Farms Wild Blend® Rice
  • 1 tablespoon olive oil
  • 1 tablespoon dried thyme
  • 3 1/3 cups chicken broth
  • ½ cup white wine
  • Salt & pepper to taste
  • 1 ½ cups broccoli florets
  • 1 red bell pepper, diced

Heat olive oil in a large skillet and brown chicken; add rice and sauté 2 more minutes. Add chicken and rice to slow cooker, along with thyme, chicken broth and wine. Cover and cook on high for 3-4 hours, or until rice is tender. During the last 1/2 hour stir in broccoli and bell pepper. Serves 4 to 6.
