Easy Mushroom Rice Pilaf

Cooking Instructions:

  • 1 cup Lundberg® Short Grain Brown Rice
  • 2 cups broth
  • 1 1/4 cups chopped fresh mushrooms
  • 2/3 cup chopped onion
  • 2 tbsp. chopped fresh parsley
  • 1 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1/8 tsp. pepper

Combine all ingredients in a 3-quart saucepan. Bring to a boil, reduce heat to low, cover and simmer 50 minutes. Remove from heat and let stand, covered, 10 minutes. Stir and serve immediately. Makes 4-6 servings.
