Cooking Instructions:
- 4 oz Lundberg® White Basmati
- 4 oz Lundberg® Quick Wild Rice
- 1 tbsp olive oil
- 1/2 tbsp grated orange peel
- 1/4 cup golden raisins
- 1 tsp ground coriander
- 3/4 tsp salt
- 1 2/3 cups liquid (water or broth)
- 1/2 cup green onion tops, sliced thinly
- 1/4 cup almonds, sliced and toasted
In medium saucepan saute rice and orange peel in
olive oil for 1 minute. Add raisins, salt, coriander and liquid. Bring
to a boil, cover. Reduce heat to a fast simmer, cook for 20 minutes. Let
stand covered 10 minutes. Stir in onions and almonds. Makes 4-5 servings.
