Penne Pasta with Spinach and Mushrooms

Cooking Instructions

  • 2 Tablespoons olive oil
  • 1 garlic clove, finely minced
  • 1 pound fresh mushrooms, sliced
  • 8 ounces low fat cream cheese
  • 1/2 cup milk
  • 1/8 teaspoon red pepper flakes (optional)
  • 8 cups fresh spinach
  • 1 (12 ounce) package Lundberg® Brown Rice Penne Pasta, cooked al dente, according to package directions. Reserve.

Garnish with:

  • 1/4 cup finely chopped chives
  • 1/2 cup grated Parmesan cheese

Heat olive oil in a large skillet and add garlic and mushrooms; cook over medium heat about 5 minutes. Add cream cheese, milk and red pepper flakes; stir until boiling. Stir in fresh spinach and cook until wilted, about 3 minutes. Salt and pepper to taste.  Mix into reserved pasta, garnish with chopped chives and Parmesan cheese.

Serves 8-10
