Red Beans and Rice

Cooking Instructions:

  • Vegetable cooking spray
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 2 15-ounce cans red beans, drained
  • 1/2 pound fully-cooked low-fat turkey sausage, cut into 1/4-inch slices
  • 1 8-ounce can tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon hot pepper sauce
  • 3 cups hot cooked Lundberg® California White Jasmine Rice
  • Hot pepper sauce (optional)

Coat Dutch oven with cooking spray and place over medium-high heat until hot. Add onion, celery, green pepper and garlic. Cook 2 to 3 minutes. Add beans, sausage, tomato sauce, Worcestershire sauce, red pepper and pepper sauce. Reduce heat; cover and simmer 15 minutes. Serve beans over rice with pepper sauce. Makes 6 servings.

    Hi R. Thomasson, Brown and white rice lies in the way they are processed. When brown rice is milled, only the husk is removed. The brown rice retains a bran layer that is removed when white rice is milled. As a result, brown rice has more fiber than white rice. While brown rice tastes great on its own, we think it is also delicious when cooked with chicken or vegetable broth instead of water (or a portion of water). Brown rice also tastes great when you add minced garlic to the rice cooker or pot when cooking. Whether you choose to eat brown rice or white, we hope you enjoy the products Lundberg has to offer!
