Cooking Instructions:

Preheat oven to 325°F. In a large bowl, combine couscous, raisins, chopped mint, feta cheese, and tomato pulp. Stuff equally divided mixture inside the ripe medium-to-large tomatoes. Bake for about 20 minutes. Serves 8.
