Cooking Instructions:

  • 3 cups cooked Lundberg® Organic Sushi Rice, cooled
  • 1 cup grated Parmesan-Romano cheese blend
  • 2/3 cup half and half
  • 1/2 cup chopped fresh basil leaves
  • 8-10 large thin slices prosciutto (cured Italian ham)
  • 1 (7 oz.) jar roasted red peppers, drained and cut in strips

Combine rice, cheese, half and half, and basil in large bowl. Place 1 prosciutto slice on cutting board; spread 1/2 cup rice mixture evenly over prosciutto, pressing slightly. Arrange a few pepper strips lengthwise down center over rice; carefully roll into a log, about 8 inches long and 1 1/2 inches in diameter. Repeat with remaining prosciutto slices; refrigerate 15 minutes. Cut each roll crosswise into 1-inch pieces, placing on platter, cut side up, to resemble sushi. Serve at room temperature. Makes 16 servings (about 64 pieces).

    I'm part of a teaching staff conducting a whole plant food cooking class. I demonstrated making sushi the other night with short grain brown rice. Does Lundberg sell brown sushi rice? I know the white sushi rice is available but we're trying to encourage our participants to use whole grain products. I notice more and more Japanese restaurants are offering brown rice sushi, so if you are not selling brown sushi rice, it might be a good seller.  Or, do you recommend I continue using the short grain brown rice and if so, do you have a recipe?

    Mr. and Mrs. Lundberg (not sure what their first names are), attended one of the Weimar Institute's Reversing Diabetes classes my husband and I conducted at the Cannon Beach Conference Center in Cannon Beach, OR a few years ago. Please tell them hello for me. I think about them every time I use Lundberg rice or encourage the class participants to us your rice.

    Hi Robin, 

    Your whole plant food cooking class sounds SO cool! Unfortunately, Lundberg does not sell brown sushi rice. We recommend you continue to use the short grain brown rice, which would work well with this recipe.

I am so sorry to tell you that my grandpa passed away last summer.
