Coolin' Countrywild® Rice Salad
Cooking Instructions:
- 1 cup uncooked Lundberg® Countrywild® rice, cooked according to package directions.
- 1 each red & green bell pepper, seeded and diced
- 1 can (2.25 oz) sliced black olives, drained (1/4 cup)
- 1 stalk celery, finely chopped (1-1/4 cup)
- 4 green onions, finely chopped (1-1/4 cup)
- 2 cans (6 oz.) crabmeat, drained and flaked (1 cup)
- 2 tbsp. lemon juice
- 1 tsp. curry powder
- 1/2 cup nonfat or lowfat mayonnaise
Combine cooked, cooled rice and all ingredients. Toss lightly. Chill. Serve on a bed of lettuce and garnish with bell pepper slivers and olives. Yield: 6 cups
