Festival Rice Salad

Cooking Instructions:

  • 2 cups cooked chilled Lundberg® Brown rice (Wehani® or long grain)
  • 1/2 cup chopped king crab or lobster
  • 1/2 cup slivered ham
  • 1/2 cup finely chopped celery
  • 2 hard cooked eggs, finely chopped
  • 1 tbsp. chopped chives
  • 1/4 cup chopped parsley
  • 1 tbsp. olive oil
  • 1 tbsp. wine vinegar
  • 1/2 cup mayonnaise
  • salt and pepper to taste

Combine all ingredients by tossing lightly except oil, vinegar and mayonnaise. Sprinkle oil and vinegar over mixture. Add mayonnaise and season to taste. Refrigerate for several hours for enhanced flavor.
