Wild Summer Salad

Cooking Instructions:

  • 1 cup uncooked Lundberg® Wild Blend® rice, cooked according to package directions
  • 1 cup cooked, boneless chicken breast, cubed
  • 1 medium tomato, seeded and diced (3/4 cup)
  • 1 bunch green onions, chopped (3/4 cup)
  • 1/3 cup cooked green peas
  • 4 tbsp. rice vinegar
  • 1 tbsp. sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp. dried tarragon
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve. Yield: 5 cups.
