Wild Summer Salad

Cooking Instructions:
- 1 cup uncooked Lundberg® Wild Blend® rice, cooked according to package directions
- 1 cup cooked, boneless chicken breast, cubed
- 1 medium tomato, seeded and diced (3/4 cup)
- 1 bunch green onions, chopped (3/4 cup)
- 1/3 cup cooked green peas
- 4 tbsp. rice vinegar
- 1 tbsp. sesame oil
- 1 clove garlic, minced
- 1/2 tsp. dried tarragon
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Combine cooked, cooled rice with all ingredients. Toss lightly. Chill and serve. Yield: 5 cups.
