Paella Wild Blend® Salad

Cooking Instructions:

  • 2 cups cooked Lundberg® Wild Blend® or long grain brown rice
    (cooked in chicken broth with 1/8 tsp. turmeric and 1/4 tsp. crushed dried tarragon leaves)
  • 1 cup cooked chicken breast cubes
  • 1 small can peeled de-veined cooked shrimp
  • 1 medium tomato seeded and diced
  • 1 bunch chopped green onion
  • 1/3 cup cooked green peas
  • 3 tbs rice vinegar
  • 1 tbsp. olive oil
  • 1 clove garlic minced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • Lettuce leaves

Combine rice and other ingredients in a large bowl. Combine vinegar oil garlic salt and pepper in a jar with a lid. Shake well and pour over rice mixture toss lightly. Serve on lettuce leaves. Serve warm or chilled. Makes 4 servings.
