Cooking Instructions:
- 2 cups cooked Lundberg®
Wild Blend® or long
grain brown rice
(cooked in chicken broth with 1/8 tsp. turmeric and 1/4 tsp.
crushed dried tarragon leaves) - 1 cup cooked chicken breast cubes
- 1 small can peeled de-veined cooked shrimp
- 1 medium tomato seeded and diced
- 1 bunch chopped green onion
- 1/3 cup cooked green peas
- 3 tbs rice vinegar
- 1 tbsp. olive oil
- 1 clove garlic minced
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- Lettuce leaves
Combine rice and other ingredients in a large bowl. Combine
vinegar oil garlic salt and pepper in a jar with a lid. Shake well
and pour over rice mixture toss lightly. Serve on lettuce leaves.
Serve warm or chilled. Makes 4 servings.
