Pear & Walnut Rice Salad with Blue Cheese Vinaigrette

Cooking Instructions:

  • 3 cups Lundberg® Long Grain Brown Rice or Golden Rose® Brown Rice
  • 1 large firm pear, such as Anjou or Bartlett, cored and diced
  • 3 medium green onions, chopped
  • 1/2 cup coarsely chopped toasted walnuts
  • 1/3 cup crumbled blue cheese
  • 1/3 cup prepared vinaigrette (garlic, herb or raspberry)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Combine all ingredients in medium bowl; toss to coat. Serve immediately over lettuce leaves and top with dried cranberries if desired. Makes 6 servings.

    From my door to your rice paddy, I am only 105 miles away in Lake County. Thanks for featuring two (almost local) crops for which our community is well-known!

    Our Bartlett pears and walnuts have no equal in quality and taste!

    This recipe was a great hit with the family. Very easy to make.. did change some of the ingredients
    slightly. I used Lundberg Wild Rice , Glazed Walnuts, Feta cheese and my vinaigrette was Strawberry Vinaigrette. .Everyone loved it ..
      Ginny I think Goat Cheese would be awesome in this..
