Roasted Brown Rice Couscous Stuffing with Almonds, Dried Cherries & Mediterranean Spices

Cooking Instructions:

    • 1 box Lundberg Family Farms Mediterranean Curry Roasted Brown Rice Couscous, prepared according to package directions
    • 1 cup onion, chopped
    • 1/2 cup celery, chopped
    • 1 tablespoon olive oil
    • 1/4 cup slivered almonds
    • 2 tablespoons fresh lemon juice
    • 1/4 cup dried cherries, chopped (or pitted prunes, diced)
    • 1/4 cup dried apricots, chopped (or golden raisins)

    Sauté onion and celery in olive oil until softened and translucent. Stir in nuts, lemon juice, and dried fruit. Combine well with Mediterranean Couscous. Fill a greased 1-1/2 quart casserole and bake at 350°F, uncovered, for 20-25 minutes until hot and slightly golden. Or, stuff a large roasting chicken, and bake until chicken is cooked. Arrange leftover stuffing around chicken for the last 25 minutes of cooking.

    Serves 4-6.
