2001 Recipe Contest Grand Prize Winner
Easy, delicious and very flexible, not only does
this make a great stuffing for crown roasts (recipe below), it is
excellent served with roasted or grilled beef, poultry, ham or
lamb.
Cooking Instructions:
- 3-4 slices pancetta (or bacon), minced
- 2 shallots, minced
- 1 cup Lundberg® Wild Blend®
- 1 Tbsp. butter
- 2 ¼ cups chicken broth
- 1 ½ cups total of diced carrots, parsnips, and
green beans
- fresh thyme and sage leaves
- 2 cups bread cubes
Sauté pancetta and shallots with butter over medium heat to
brown lightly. Add rice and sauté for 2-3 minutes. Add chicken
broth, pepper to taste, and a few sprigs of thyme tied together
with a few sage leaves. Cover and simmer at low heat for 25
minutes, stir in diced fresh veggie medley and continue to simmer,
covered, for 25 minutes or longer. Rice will be tender, but still a bit
soupy. Cut 2 cups of small ½ inch cubes from a baguette and stir
into hot rice. If rice cooked dry add a splash of stock with bread.

Lamb Crown Roast Michelangelo
Cooking Instructions:
- 2 Tbsp. whole grain mustard
- 2 Tbsp. olive oil
- 2 tsp. each fresh cracked black pepper, pressed
garlic, mixed dry herbs
- 1 tsp. sea salt
- 1 lamb crown roast, well trimmed
- 1 ½ lbs. fresh mushrooms
- 2 Tbsp. butter
- fresh parsley
- 1 tsp. garlic
- ¾ to 1 cup chicken stock
- Wild and Brown Rice Dressing (above)
Combine mustard, oil, pepper, garlic, herbs and
salt to make a paste. Wrap lamb ribs with foil to protect from heat
and slather paste over lamb. Roast on a rack at 375 degrees to
135-145 degrees internal, about 45-60 minutes. Remove from oven,
transfer to a cutting board and cover loosely with foil. Top rib bones
with chop frills before serving. Place roasting pan over high flame,
adding mushrooms, 2 Tbsp. butter, garlic, and chicken stock,
cooking mushrooms and reducing stock. Add a handful of fresh
parsley in the last few minutes of cooking time, taste and adjust
seasoning. Present lamb crown to table filled with Wild & Brown
Dressing and surrounded by mushrooms.
