Cooking Instructions:
- 1 pound boneless, skinless chicken pieces,
cut into strips
- 1 ½ cups Lundberg
Family Farms Wild Blend® Rice
- 1 tablespoon olive oil
- 1 tablespoon dried thyme
- 3 1/3 cups chicken broth
- ½ cup white wine
- Salt & pepper to taste
- 1 ½ cups broccoli florets
- 1 red bell pepper, diced
Heat olive oil in a large skillet and brown
chicken; add rice and sauté 2 more minutes. Add chicken and rice to
slow cooker, along with thyme, chicken broth and wine. Cover and cook
on high for 3-4 hours, or until rice is tender. During the last 1/2
hour stir in broccoli and bell pepper. Serves 4 to 6.
