- In a medium saucepan combine 1 3/4 cups of water, rice, and seasoning. Stir well and bring to a boil.
- Cover and reduce heat to maintain a simmer. Do not lift lid while cooking. Simmer for 35 minutes.
- Remove from heat. Let stand covered for 5 minutes. Add contents of coconut pouch. Fluff with fork and serve.
- Soak up the compliments.
For a quick and easy tropical dish, stir in diced dried mangos and toasted cashews. For even more flavor, substitute 3/4 cup of water with unsweetened coconut milk. Make this a meal by adding cooked shrimp and pineapple pieces.
