Ingredients

1 Cup Lundberg Family Farms Black Pearl Rice

1 3/4 Cup Water

1 Can Coconut Milk

1 Cup Palm Sugar

½ Cup Toasted Cashews

½ Cup Toasted Coconut

1 Tbsp. Kaffir Lime Leaves, sliced

Lime Zest to taste

Preparation

In a small saucepan, bring the rice and water to a boil.  Once boiling, reduce the heat to low and simmer for 45 minutes and let steam for 10 minutes.

In a large bowl add and mix together the rice, coconut milk and sugar.

Slice the kaffir lime leaves very thinly and add to the mixture.

Over medium heat, toast the cashews and coconut.  Add to rice pudding and enjoy.
