1 3⁄4cupsvegetable broth
2tbspfresh lime juice (about 1 lime)
1bunch fresh cilantro, chopped (about 1 cup)
Salt and pepper to taste

- In a pot or saucepan with a tight fitting lid bring vegetable broth/stock, garlic, and rice to a boil. Cover, reduce heat to low and simmer for 30 minutes until all the liquid has been absorbed. Remove from heat and let stand covered 5 minutes, fluff with a fork.
- While the rice is cooking, whisk together lime juice, olive oil, oregano and cumin. Add cilantro and dressing to the rice and toss until combined. Taste and add salt and pepper as desired.
