Deconstructed Spicy Tuna Roll
Spicy tuna meets creamy avocado, chewy black rice and cooling cucumber to create an elegant and impressive appetizer that is sure to please any guest. For a vegan alternative that packs just as much flavor, try substituting the tuna for roasted beets!
For the sushi rice:
1¾ c. water
2 Tbsp. rice vinegar
2 tsp. sugar
1 tsp. vegetable oil
2 tsp. tamari or soy sauce
For the filling:
6oz sushi-grade Ahi Tuna or 2 medium sized red or candy-striped beets, roasted and peeled
1 tsp. Sriracha (or to taste)
1½ tsp. tamari or soy sauce (or to taste)
2 tsp. minced scallions, white and light green portion, reserve green tops for garnish
½ tsp. toasted sesame oil
¼ tsp. toasted white sesame seeds
For the assembly:
1 cucumber, diced into ¼” cubes
1 medium-sized avocado, pitted, peeled and diced into ¼” cubes
1 sheet of nori, cut into 1½” squares
Accompaniments: prepared wasabi, pickled ginger
Cook rice according to package instructions. While rice is cooking, combine the rice vinegar, tamari, sugar and oil in a microwave-safe bowl. Microwave for 25-35 seconds and stir until sugar has dissolved, and ingredients are well combined. Once rice finishes steaming, slowly mix the vinegar mixture into the rice.
Dice tuna or beets into ½” cubes, place in a bowl. Add Sriracha, tamari, scallions, sesame oil, and sesame seeds. Toss to combine.
Place a metal ring mold or 16oz can with top and bottom removed on your serving plate. Fill mold with 1/3 cup of prepared rice, flatten, compress and smooth surface using back of spoon. Add a layer of diced avocado into the mold on top of the rice; flatten, compress and smooth. Repeat layering process with cucumber and spicy tuna or beet mixture. Top with a small handful of sprouts and compress firmly. Use spoon to gently press down on stack while slowly lifting off the mold.
Garnish with toasted sesame seeds, sliced scallions and a square of nori.
Serve with wasabi and pickled ginger, if desired.Download Printable Version
