4cobs fresh corn, shucked
1can (19 oz) black beans, rinsed and drained
2plum tomatoes, seeded and chopped
1jalapeno pepper, seeded and chopped (optional)
1⁄3chopped red onion
1⁄4cupsfresh lime juice
1⁄4cupschopped fresh cilantro
¼ tsp ground cumin

- Preheat grill to medium-high; grease grate well. Grill corn, turning occasionally, for 8 to 10 minutes or until lightly browned all over; let cool.
- Cut away kernels from cobs; place in bowl. Add beans, tomatoes, jalapeno, red onion, lime juice, cilantro, salt and cumin; toss to combine well.
- Serve with Lundberg Pico de Gallo Rice Chips.
