Ingredients

4 Lundberg Family Farms Organic Lightly Salted Rice Cakes or Honey Nut Rice Cakes

1 Cup Peanut Butter

1 Cup Almonds, sliced

½ Cup Lundberg Family Farms Organic Brown Rice Syrup or Honey

¼ Cup Protein Powder, Vanilla

¼ Cup Coconut, shredded

Preparation

Step 1:

In a small saucepan on low heat, add peanut butter and brown rice syrup. Mix until thoroughly combined.

Step 2:

In a large bowl, crumble rice cakes and add almonds.  Coat with the heated peanut butter mixture.

Step 3:

Mix the ingredients and slowly add protein powder until fully incorporated.

Step 4:

Spoon 1 Tbsp of the mixture and roll into a ball, repeat until bowl is empty. Roll each ball in shredded coconut.
