Puffed Quinoa Cinnamon Snack Bites
4 cups oil for frying
1 cup Lundberg Family Farms Antique White Quinoa
1 cup almonds – toasted, unsalted, roughly chopped
½ cup Lundberg Family Farms Organic Brown Rice Syrup
1 tsp. cinnamon
Fill a large pot with frying oil of choice and heat to 360 degrees.
When temperature of oil is at 360 degrees, carefully add dry, uncooked quinoa and fry for 30 seconds.
Remove quinoa and carefully add to a paper-lined plate to cool.
Add cinnamon to quinoa and combine with chopped almonds. Add mixture to a large bowl. Roll into 1-inch balls and refrigerate for 30 minutes.
