1large onion, finely chopped
1large yellow bell pepper, diced
5cloves garlic, minced
1 1⁄2tspchili powder
2cans (15 oz) black beans, rinsed and drained
2cans (14 oz) diced tomatoes, undrained
1canned chipotle peppers in adobo sauce, finely chopped
2cupsvegetable broth or water

- Heat oil in a stockpot over medium high heat; add onions, bell pepper, garlic, and spices; cook until tender, about 5 minutes.
- Add beans, tomatoes, chipotle peppers to taste, broth, and rice. Bring to a boil, cover and simmer 50 minutes.
- Remove from heat and stir in lime juice. Enjoy!
