Stovetop Cooking Instructions
In a medium saucepan, combine 1 1/2 cup water, rice, seasoning packet, and 1 Tbsp. olive oil (optional). Stir well and bring to a boil.
Cover and reduce heat to low. Do not lift lid while cooking. Simmer for 20 minutes.
Remove from heat. Fluff with fork and serve.
Soak up the compliments.
Serving Suggestions
Toss with sliced onions, grilled bell peppers, and diced cooked chicken in a baking dish. Top with shredded cheese and bake in oven until cheese is melted for a chicken fajita casserole.
Mix rice with black beans and corn, wrap rice mixture in tortillas, roll, top with enchilada sauce and your favorite shredded vegan cheese. Bake until cheese is melted and top with green onions and lives for a vegan enchilada.
